Ingredients

  • 1 cup green or brown lentils (rinsed)
  • 3 cloves garlic (minced)
  • 1 large onion (diced)
  • 3 carrots (diced)
  • 3 celery stalks (diced)
  • 1 (14.5 oz) can tomatoes (diced)
  • 6 cups vegetable broth
  • 2 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp dried oregano
  • 4 springs thyme
  • 2-3 cups chopped leafy greens (optional, e.g., kale or spinach)
  • ½ tsp sea salt and black pepper (or to taste)
  • (Optional) Fresh parsley for garnish

A nourishing, plant-based soup inspired by the wholesome Adventist lifestyle. Earthy lentils simmer with vegetables, tomatoes, and warming spices like cumin and turmeric for a comforting, flavorful bowl that's as nourishing as it is simple.

Cooking Instructions

    Rinse lentils and pick over, removing any debris. Add garlic and cook for 1 more minute.

    In a large pot, heat 2 tbsp vegetable broth or add a splash of water over medium heat. Add onion, celery. carrots, and garlic. Saute for 5-7 minutes until softened and fragrant.

    Stir in cumin and turmeric and cook for 1 minute until aromatic.

    Add lentils, diced tomatoes, water, oregano, thyme, black pepper, and salt. Stir well and bring to a boil.

    Reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils are tender.
